INGREDIENTS:  1/3 cup extra-virgin olive oil 2 tablespoons red wine vinegar 2 teaspoons Dijon mustard 2 cloves garlic minced 1/2 teaspoon sugar or to taste 1 teaspoon salt or to taste Freshly ground black pepper to taste 4-5 medium tomatoes sliced 1/2 medium red onion thinly sliced 2 tablespoons drained capers 4 sprigs fresh basil leaves only, torn with some left intact for garnish METHOD: Whisk together olive oil, red wine vinegar, mustard, garlic, sugar, salt and black pepper to taste. Ground Beef Stir Fry (Serves 4)

INGREDIENTS Stir Fry Sauce ½ cup low sodium soy sauce ¼ cup fresh squeezed orange juice (about 1 medium orange) 1 tablespoon rice vinegar ½ teaspoon fresh grated ginger 2 cloves garlic 1 tablespoon honey or brown sugar 1 tablespoon cornstarch or tapioca starch Stir Fry 1 lb (450g) ground beef 2 tablespoons sesame oil or olive oil 1 small yellow onion sliced 1 red bell pepper sliced 3 cups chopped broccoli florets 2 large carrots peeled and sliced 2 cups snap peas METHOD Whisk together the sauce ingredients in a small bowl. In a large pan or wok, heat 1 Tablespoon of sesame oil over medium heat. Add the ground beef and brown, breaking it up into small pieces, until no pink remains, 4-5 minutes. Transfer the ground beef to a bowl and drain the fat. Add the remaining Tablespoon of sesame oil to the pan over medium heat. Add all of the vegetables and stir to cook until almost tender, 5-6 minutes. Pour the sauce over the vegetables and bring it to a gentle boil over medium-high heat. Continue to cook until the sauce bubbles and thickens, 2-3 minutes. Add the ground beef back to the pan and stir to coat the beef in the veggies and sauce. INGREDIENTS 120 g / ½ cup dry farro (or quinoa if GF) 2 ears of corn 2 small zucchini, cut into thick slices olive oil 20 cherry tomatoes 1 red pepper 4 celery sticks (or 2 long stalks) 1 large spring onion 1 cup cooked chickpeas 10 g / 1/3 oz fresh basil (or mint) leaves, finely shredded DRESSING 1 garlic finely grated 30-45 ml / 2-3 tbsp lemon juice and zest of 1 lemon, adjust to taste 45 ml / 3 tbsp extra virgin olive oil 10 ml / 2 tsp maple syrup salt and pepper, to taste mild chilli flakes (I like fine Korean chilli flakes), to taste (optional) METHOD SALAD Rinse farro well and cook it in plenty of water until tender but still chewy – I find that 35-40 minutes is the sweet spot. Drain and allow it to cool. Heat up a griddle pan on a low heat. Brush the corn with a small amount of oil and place on the preheated griddle pan. Grill, turning every few minutes, until cooked and lightly charred all over. Once cool, shave the kernels off with a sharp knife. Start on the dressing while the corn grills. Brush zucchini with a small amount of oil on both sides, season and place on the hot griddle pan. Allow them to cook undisturbed until you get nice char marks on one side, flip and cook until you get the char marks again. Take the zucchini off the pan and allow them to cool and chop into smaller pieces. Prepare the remaining vegetables by cutting cherry tomatoes into quarters, pepper and celery sticks into thin slices and mincing the spring onion very finely. Combine cool farro with chickpeas, grilled zucchini, corn kernels, remaining vegetables and shredded basil in a large bowl. DRESSING To make the taste of garlic a little less punchy, combine grated garlic with 2 tbsp of lemon juice in a small bowl and set aside for 10-15 minutes while you crack on with the rest of the salad. Combine all the dressing ingredients in a small bowl or a jar with a lid – add another tablespoon of lemon juice if liked. Stir vigorously to combine or put the lid on the jar and shake very well. INGREDIENTS: For Herbed Ricotta 82 grams ricotta cheese 2 basil leaves chopped finely 1 teaspoon fresh oregano chopped finely 1 teaspoon fresh thyme chopped For Salad 2 tablespoon olive oil 1 tablespoon balsamic vinegar 1/4 teaspoon salt or to taste 1/4 teaspoon pepper or to taste 450 grams heirloom tomatoes cut into 1/2 inch slices 1/2 English cucumber sliced 6 radishes sliced 1/2 red onion sliced 1 serrano pepper chopped 6 grams basil leaves chopped 1 tablespoon oregano leaves METHOD: In a small bowl combine the ricotta cheese with the basil, fresh oregano and thyme. Set aside.  In another small bowl whisk together the olive oil, balsamic vinegar, salt and pepper. Arrange the tomato slices, cucumber, radishes and onion on a large platter then drizzle with the dressing. Season with salt and pepper if needed, then top with serrano peppers and dollop ricotta mixture evenly over the tomato slices. Garnish with fresh basil and oregano. Serve immediately. INGREDIENTS: Chickpeas 260g chickpeas rinsed, drained, and dried 13g olive oil 1g ground cumin 1g ground chili powder 0.5g cayenne pepper 1g salt Salad 173g pearled couscous 195g chopped cucumber 225g halved cherry tomatoes 60g chopped Kalamata olives 15g finely chopped flat-leaf parsley 75g jarred roasted red bell pepper diced, optional Crumbled feta cheese optional Dressing  60g red wine vinegar 30g Dijon-style mustard 0.5g dried oregano 108g olive oil 20g honey 1 large lemon METHOD: Roast Chickpeas: Preheat oven to 400°F. Thoroughly dry the rinsed chickpeas—using a salad spinner works great. Add the chickpeas to a bowl with oil and spices. Toss to coat. Spread on a lined sheet pan and roast for 18–22 minutes, shaking halfway. I like them best at 20 minutes—crispy but not too hard. Couscous: Prepare according to package directions.Dressing: Zest a lemon for 1/2 tsp and juice it for 3 tbsp. Add everything to a jar, then season to taste (I use 1/2 tsp salt & 1/4 tsp pepper). Seal and shake well. Taste and adjust if needed. Assemble: Add cooled couscous to a large bowl then add in the veggies and cooled chickpeas. INGREDIENTS: Chicken 3 garlic cloves, finely chopped 1 tablespoon ground cumin 1 tablespoon olive oil 1 tablespoon paprika ½ teaspoon freshly ground black pepper ½ teaspoon dried oregano 1½ teaspoons kosher salt, divided 2 lemons 1 (4-4½ pound) whole chicken Green Sauce 1 cup (packed) cilantro leaves with tender stems 1–2 medium jalapeños, coarsely chopped 1 garlic clove, finely chopped 1 tablespoon extra-virgin olive oil 2½ teaspoons fresh lime juice ¼ teaspoon kosher salt ⅓ cup mayonnaise Salad 1 English hothouse or cucumbers, cubed 1 firm-ripe avocado, cubed 3 scallions, thinly sliced 1 tablespoon plus 1 teaspoon fresh lime juice 1 tablespoon extra-virgin olive oil ¾ teaspoon kosher salt ½ cup cilantro leaves with tender stems, coarsely chopped, plus more for serving METHOD: ChickenStep 1Arrange rack in middle of oven; preheat to 400°. Mix garlic, cumin, oil, paprika, pepper, oregano, ½ tsp. salt, and finely grated zest from 1 lemon in a medium bowl. Quarter zested lemon; set aside 2 quarters. Squeeze juice from 1 whole lemon and remaining 2 quarters to yield 2 Tbsp. juice; stir into spice mixture. Step 2Place chicken breast side down on work surface. Spatchcock chicken by cutting along both sides of backbone with kitchen shears. Remove backbone; reserve for stock. Turn chicken breast side up and splay open. Press down on breastbone with palms until you hear it crack and chicken is as flat as possible. Pat chicken dry with paper towels. Rub chicken all over with 2 reserved lemon quarters. Squeeze juice over bird, then rub skin all over with inside of rinds. Step 3From both edges of cavity, loosen skin from breasts and thighs, being careful not to tear skin. Using your fingers, gently spread 2 heaping Tbsp. spice mixture under skin (reserve remaining spice mixture), then season chicken all over with remaining 1 tsp. salt. Transfer chicken, spread flat and skin side up, to a roasting pan or large skillet. Step 4Roast chicken 20 minutes, then brush with spice mixture and pan juices. Continue roasting, basting with spice mixture and pan juices every 20 minutes, until juices run clear when thigh is pierced with a fork or an instant-read thermometer inserted into thickest part of thigh registers 165º, 50-60 minutes total. Step 5Transfer chicken to a cutting board and let rest 15 minutes, reserving pan juices. Green SauceStep 6Purée cilantro, jalapeños, garlic, oil, lime juice, and salt in a blender until combined. Add mayonnaise and purée until well blended. Transfer to a small bowl, cover, and chill until ready to use. Do Ahead: Green sauce can be made 5 days ahead. Cover and chill. SaladStep 7Gently toss cucumbers, avocado, scallions, lime juice, oil, salt, and ½ cup cilantro in a large bowl. Sprinkle with more cilantro. INGREDIENTS: 3 cups Cherry tomatoes 1 medium Red onion ¼ cup finely minced Parsley ((loosely packed)) ¼ cup Lemon juice 3 tbsp Olive oil 1 ½ tsp Flaky salt ((see notes)) 1 tsp freshly cracked Black pepper, to taste METHOD: Start by slicing the cherry tomatoes in half, lengthwise. Next, thinly slice the red onion lengthwise, the thinner the slices, the better. Add the tomatoes and onions into a large bowl. Add the chopped parsley into the bowl, along with the lemon juice, olive oil, kosher salt and black pepper. Toss to combine and add more salt or pepper if needed. INGREDIENTS: 12 ounces  (340g) spiral pasta, such as cellentani, cavatappi, or fusilli ¾ cup pasta water 2 small zucchini, sliced into very thin rounds* 1 small yellow squash, sliced into very thin rounds* 1 tablespoon fresh lemon juice 1 teaspoon sea salt Freshly ground black pepper ¼ cup toasted pine nuts ½ cup fresh basil leaves Red pepper flakes, optional Pesto ½ cup toasted pine nuts 2 tablespoons fresh lemon juice 1 small garlic clove ¼ teaspoon sea salt Freshly ground black pepper 2 cups basil leaves ½ cup extra-virgin olive oil ¼ cup freshly grated Parmesan cheese, optional METHOD: Make the pesto: In a food processor, combine the pine nuts, lemon juice, garlic, salt, and several grinds of pepper and pulse until well chopped. Add the basil and pulse to combine. With the food processor running, drizzle in the olive oil and pulse until combined. Add the cheese, if using, and briefly pulse to combine. Set aside. Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente. Before draining the pasta, scoop up ¾ cup of the starchy pasta water and set aside. Drain the pasta and toss it with a little olive oil so that it doesn’t stick together. Spread the pasta on a baking sheet and let it (and the reserved pasta water) cool to room temperature. In a large bowl combine the pasta, zucchini, yellow squash, pesto, the reserved pasta water, lemon juice, salt, and pepper and toss. Season to taste. INGREDIENTS: 1 pound (up to 500g) ground pork, alternative options, ground lamb or beef ½ cup breadcrumbs 1 large egg ¼ cup finely chopped fresh parsley 2 cloves garlic, minced 1 small onion, finely grated 1 teaspoon dried oregano ½ teaspoon cumin Salt and pepper to taste Olive oil, for frying or brushing METHOD: In a large bowl, combine the ground pork, breadcrumbs, egg, parsley, garlic, onion, oregano, cumin, salt, and pepper. Mix well until evenly distributed. Shape the mixture into 1.5-inch balls. You should get around 15-20 meatballs. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
